Lemon Poppy Seed Gelato

Gelato:

Crema Lusso

5 quarts of Crema Lusso


Lemons, zest and juice

Cane Sugar

½ cup


Pure Vanilla Extract

1 tbsp


Toasted Poppy Seeds

¼ cup


Topping:

Extra Virgin olive oil

Lemon zest

Himalayan sea salt


Instructions:

In mixing bowl, combine lemon zest, lemon juice, sugar and vanilla extract and place in medium saucepan over medium flame.

Bring to a simmer, reducing heat to medium-low and stir continually. Once slightly thickened, remove from heat. Cover with plastic wrap and cool in refrigerator.

Once cooled, blend lemon mixture with Crema Lusso.

Add poppy seeds to mixture and blend well.

Pour mixture into ice gelato machine and churn.

Spoon into dessert cups and top with a drizzle of extra virgin olive oil, a sprinkle of lemon zest and a pinch of sea salt and serve..
