Honey Saffron Gelato
Acacia Honey
2 cups
Cane Sugar
2 tsp
2 tsp
Saffron Threads
Crema Lusso
5 quarts
Candied Orange Peel or Fresh Orange Zest
Instructions:
Using mortar and pestle, crush the saffron and sugar until fragrant. In a medium saucepan, gently warm the honey, adding the sugar-saffron blend after a few minutes. Stir over a gentle heat until well-blended and the sugars have dissolved. Set aside and let cool. In a large mixing tub, fold the saffron-infused honey into the Crema Lusso. Churn in gelato machine. Spoon into dessert cups and top with candied orange peel or fresh orange zest and serve.
